Two different questions:
1. How do you sign backorder? Answer: A clear, efficient way is to fs-BACK then
sign ORDER. (Note: If this concept is used repeatedly among the same people
expect the "BACK" part of the concept to reduce to looking a lot like BK).
2. How do you sign an explanation of what backorder means for someone that
doesn't know the concept of backorder?
Answer: Dozens of different ways depending on the situation.
One of those possible approaches:
NOW? WE NOT HAVE. WE FINISH ORDER. WAITING IX-[they] COMPANY SEND-[us].
HAPPEN ARRIVE I INFORM-you WILL. TEXT OK fs-OR YOU PREFER EMAIL?

There are many ways to approach signing or explaining the concept of
"backordered." Choosing a good approach depends on understanding your local
situation and your communication partner's familiarity with the concept of
"backorder."
For example, if you do a bunch of expansion for me (Bill Vicars) you'll be
wasting both of our time and could have instead just spelled BACK and signed
ORDER.
However, if you need to sign backorder to someone who doesn't have the word
backorder in their vocabulary -- you might want to expand on the concept by
using a set of signs that create the specific meaning you want to create.
The right way to sign something is the way that fits the situation and the
people involved.
Of course the use of specific vocabulary versus longer explanations of the
concept applies to English and other languages too. Saying, writing, or typing
the word "backorder" to an English speaker who doesn't know the meaning of the
word "backorder" -- doesn't magically make things clear for the English speaker.
