Physiologist Ancel Keys pulled a fast one. He "cherry-picked" his data when
he published an influential paper titled "Atherosclerosis, a Problem in Newer
Public Health." The real reason for heart disease in America is generally agreed
to be refined carbohydrates such as white sugar, white flour, and high-fructose
corn syrup. Your liver converts excess blood sugar into triglycerides.

When 152 overweight adults ate a two-egg breakfast daily for 2
months, they lost 65 percent more weight than did a control group
who consumed a breakfast equal in calories but lower in protein.
Two eggs contain 12 grams of protein which is enough to increase
satiety by up to 50 percent and subsequently lighten your lunch
intake by about 164 calories. Source: Dhurandhar, Ph.D.,

In 1980 it was discovered that LDL actually comes
in different sizes.
Small, dense LDL subfractions are associated with clogged arteries.
Large, "fluffy" LDL particles show no correlation
with clogged arteries.
When people replace the carbohydrates in their diet with
fat--saturated or unsaturated--the number of small dense LDL
particles decreases.
Low triglyceride levels at middle age are the
best predictor of exceptional survival.

The glycemic index, glycaemic index, or GI is a measure of the
effects of carbohydrates in food on blood sugar levels. It estimates
how much each gram of available carbohydrate (total carbohydrate
minus fiber) in a food raises a person's blood glucose level
following consumption of the food, relative to consumption of
glucose. Glucose has a glycemic index of 100, by definition, and
other foods have a lower glycemic index.
